The inspiration for these came from SkinnyTaste and her recipe for Zucchini Tots.
1 cup grated carrot
1 cup grated zucchini
2 large eggs
½ medium onion, diced
½ cup crumbled goat cheese
½ cup crushed crackers (I used a seasoned multi-grain)
Salt and pepper to taste
Preheat oven to 400.
Spray a muffin pan with the cooking spray.
Grate zucchini into a clean dishtowel in order to squeeze out the excess liquid. (Don’t use an old one… or have a better idea of your own strength… I ripped my dishtowel)
Combine with the rest of the ingredients, mix with a spoon.
Divide the mixture equally between the 12 muffin sections, compress with the back of a spoon so that they stay together when they are cooked.
You can also just shape them into little logs/blobs and bake them on a cookie sheet.
Cook for 15-18 minutes.
