This is great when you have a variety of vegetables/fruit in the fridge but it is too hot to think about cooking them. This is what I used:
1 small summer cabbage
½ large apple
2 carrots
1 small onion
1 small head broccoli
½ cup dried cranberries or raisins
2 slices bacon
1. Fry the bacon until crisp, drain, pat excess grease off and crumble.
2. Grate or finely chop the cabbage/carrots/onion.
3. Chop the broccoli into bite size pieces.
4. Peel and chop the apple; toss the apple with a little lemon juice.
Place all the above, plus the crumbled bacon and cranberries or raisins into a large bowl and toss with the dressing. I lined the serving bowl with some of the outer leaves of the cabbage.
Dressing
¾ cup Miracle Whip
2 tablespoons apple cider vinegar
2 tablespoons maple syrup
Salt and pepper to taste
Whisk until combined, taste test to see if you need to add anything else. A bit of mustard might be nice, although I didn’t add it.
