Corn Chowder

DSC019193 slices bacon, diced
1 small onion, diced
1 clove garlic, minced
3 cobs corn
3 medium potatoes
2 cups chicken or vegetable broth
2 cups of milk/cream
salt and pepper to taste

Cook corn, (we bbq’d it the day before) and slice off the cob.

Scrub potatoes and cut into bite size pieces, cook in chicken or vegetable broth, or salted water if that is all you have.

Meanwhile, saute diced bacon until crisp, remove from pan, saute onion and garlic until soft and fragrant and drain.

When potatoes are fork tender, drain most of the water/broth off and add corn, onion/garlic mixture and milk or cream. We don’t like ours very creamy, so used milk. You may have to adjust the milk/cream amounts depending on your personal preference.

To serve, ladle into bowls, sprinkle bacon over top and season with salt and freshly ground pepper.
