Carrot Patties – Serves 2 – 2 patties each
These are a great way to use up leftover potatoes and carrots and just about the easiest thing to throw together.
Ingredients
1 ½ cups mashed potatoes
I cup cook carrots
I egg, beaten
I minced leek, the white part
Salt and pepper to taste
Instructions
Beat the egg, add a few grinds of salt and pepper, mash the carrots and potatoes if they are not already mashed and combine.
My potatoes were mashed smooth, and the carrots coarse. I like the contrast of texture. My carrot was a pale yellow one, so doesn’t show up very well in the pictures. I used a leek because I happened to have one in the fridge, but you could use regular onion. You could also add garlic or any number of spices to the mixture.
Form into patties and fry in medium hot oil; I used reserved bacon grease. Mmm… bacon…
Make sure they are browned on the bottom before trying to flip them over, otherwise you wind up with a mess… not that I am speaking from experience… When they are browned on both sides, they are ready.
I think these would be good instead of home fries alongside bacon and eggs or as a side dish with barbequed anything.
We ate them as they were, but you could add a dollop of sour cream to the top… or a swirl of ketchup… or a drizzle of maple syrup… really the possibilities are endless.
